This casserole was delicious! Even my 21 month old son enjoyed it!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;12 oz Bacon or Sausage (I used bacon)&lt;br /&gt;4 c. Hash Browns, Thawed&lt;br /&gt;1 ½ c. Shredded Colby Jack Cheese&lt;br /&gt;3 Beaten Eggs&lt;br /&gt;1 c. Milk&lt;br /&gt;¼ t. Pepper&lt;br /&gt;Salsa (optional)&lt;br /&gt;&lt;br /&gt;In skillet, cook sausage or bacon (crumble cooked bacon). In 8"x8" baking dish, layer potatoes, ½ the cheese, meat, and remaining cheese. In bowl, combine eggs, milk and pepper. Pour over cheese. Bake COVERED at 350˚ for 50-55 minutes or until knife inserted comes out clean. Serve with salsa. I made them over the holidays for my coworkers and they loved them!&lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;&lt;br /&gt;1 12oz bag butterscotch morsels&lt;br /&gt;3 1/2 cups chow mein noodles&lt;br /&gt;2 cups unsalted peanuts&lt;br /&gt;&lt;br /&gt;Melt morsels in a large pot (be careful not to let them stick) on low to medium low heat. Add noodles and peanuts and stir to coat with morsels. It was so easy to make and so yummy! &lt;br /&gt;&lt;br /&gt;1 (15 ounce) can whole kernel corn, drained&lt;br /&gt;2 (14.5 ounce) cans chicken broth&lt;br /&gt;1 (10 ounce) can chunk chicken&lt;br /&gt;1 (15 ounce) can black beans&lt;br /&gt;1 (10 ounce) can diced tomatoes with green chile peppers, drained (I used Rotel)&lt;br /&gt;**I also added some black pepper, garlic powder, and a little chili pepper&lt;br /&gt;&lt;br /&gt;Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through. I got this recipe from &lt;a href="http://thepioneerwoman.com/cooking/2008/02/pan-fried_ribeye_steak_heaven_in_a_skillet/"&gt;The Pioneer Woman&lt;/a&gt;. I frequent her website and I found this recipe for ribeye steak. &lt;br /&gt;&lt;br /&gt;Our gas tank was empty on our grill so I decided to try this out. This recipe is most certainly a keeper!&lt;br /&gt;&lt;br /&gt;I did make a few changes but for the most part I followed the original recipe.&lt;br /&gt;&lt;br /&gt;2 nice sized ribeye steaks&lt;br /&gt;1tbsp Lawry's Seasoned Salt&lt;br /&gt;2tbsp lemon and pepper seasoning&lt;br /&gt;1tbsp McCormick Spicy Steak Seasoning&lt;br /&gt;1/2tsp kosher salt&lt;br /&gt;1/2tsp black pepper&lt;br /&gt;1tbsp olive oil&lt;br /&gt;1tbsp butter&lt;br /&gt;&lt;br /&gt;Mix all of these ingredients in a bowl. Sprinkle some of the rub on one side of the steak. Rub it all over the steak, turn the steak and repeat. The measurements above were enough for two steaks. &lt;br /&gt;&lt;br /&gt;Place a skillet on the stove and let it heat. Once heated, add the olive oil and butter. Let it heat until the butter is brown. Place the steak in the pan over the mixture. I cooked mine for about 5 minutes on each side. We like our steaks medium well around here!&lt;br /&gt;&lt;br /&gt;I served the steaks with a baked sweet potato and mushrooms and onions. This was an excellent dinner. These burgers were so good and they reminded me of a patty melt. My husband thought they were very tasty and said that I must make them again!&lt;br /&gt;&lt;br /&gt;*My changes are in parenthesis&lt;br /&gt;&lt;br /&gt;1lb ground beef -85% lean (I used half ground beef and half ground chuck)&lt;br /&gt;1 large egg, lightly beaten&lt;br /&gt;1 medium yellow onion, half grated, the other half thinly sliced (I didn't put onion in the burgers). Mix until combined and form into thin patties.&lt;br /&gt;Spread butter on one side of each slice of bread.&lt;br /&gt;Heat a large heavy skillet over medium-high heat. Cook the burgers about 3 minutes on each side. Drain on paper towels. Drain the grease from the skillet.&lt;br /&gt;In the same skillet, place six slices of bread, butter side down. I use it on everything! Such a wonderful seasoning.&lt;br /&gt;&lt;br /&gt;Season the steak strips with House Seasoning, then dust with flour. In a large skillet, quickly brown them on both sides in the olive oil and butter. Remove the steak from the pan. Add the onion slices and mushrooms to the pan drippings. Saute for a few minutes, until the onion is tender. Sprinkle with 1 teaspoon flour. Put the steak back into the pan with the onion and mushrooms. Add the mushroom soup and beef broth. Cook over low heat for about 30 minutes, covered. Adjust seasoning to taste, adding salt and pepper, as needed. These sandwiches can be made in 10 minutes or less. &lt;br /&gt;&lt;br /&gt;Ingredients&lt;br /&gt;1/2 pound (or up to 1 pound) sliced roast beef&lt;br /&gt;1 tsp brown sugar&lt;br /&gt;1 cup of barbecue sauce (I use Stubbs)&lt;br /&gt;&lt;br /&gt;Place beef in a pan on medium heat. Add barbecue sauce and brown sugar. Let simmer for about 5 minutes. Place on buns and serve. Now how easy is that? I've tried many of her recipes and all of them have been delicious. I'm also a big fan of peach cobbler. I'm not the type to roll out crust, so I found this recipe to be very easy.&lt;br /&gt;&lt;br /&gt;1 - 28oz can peaches&lt;br /&gt;1 cup sugar&lt;br /&gt;3/4 cup self rising flour&lt;br /&gt;1 stick of butter&lt;br /&gt;3/4 cup milk&lt;br /&gt;ground cinnamon (optional)&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees. Place the stick of butter in a 3qt baking dish and place it in the oven to melt. In a bowl, mix the sugar and flour together. Slowly pour in the milk and continue stirring to prevent clumping. Pour this mixture over melted butter. DO NOT STIR.&lt;br /&gt;&lt;br /&gt;Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Each week we have a different recipe. This weeks recipe is the Creamy Chicken Enchiladas.&lt;br /&gt;&lt;br /&gt;2 cans cream of chicken soup&lt;br /&gt;1 rotisserie chicken shredded (3 chicken breasts, boiled and shredded)&lt;br /&gt;12 flour tortillas&lt;br /&gt;16oz sour cream&lt;br /&gt;3 cups Monterrey Jack cheese (mexican blend cheese)&lt;br /&gt;3 green onions chopped&lt;br /&gt;1 can green chilies - drained and chopped&lt;br /&gt;1 can sliced olives - drained (I didn't use)&lt;br /&gt;&lt;br /&gt;**The things I did differently are in parenthesis**&lt;br /&gt;&lt;br /&gt;Preheat over to 350. Mix chicken, green chilies, sour cream, soup, and onion together. Fill and roll up tortillas. Place in baking dish and top with cheese and olives.&lt;br /&gt;&lt;br /&gt;Bake for 35-40 minutes. I only baked for 30 minutes but they turned out great! I served them with some spanish rice. Since blackberries were almost $4.00 for a very small container at my local supermarket, I decided to use pears and blueberries, 2 of my other favorites!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Ingredients, the ones I used are in parenthesis:&lt;br /&gt;4 cups blackberries (2 small cans of pear halves cut up and drained and 2 cups of blueberries)&lt;br /&gt;1 tbsp lemon juice&lt;br /&gt;1 large egg&lt;br /&gt;1 cup sugar&lt;br /&gt;1 cup all purpose flour&lt;br /&gt;6 tbsp melted butter&lt;br /&gt;&lt;br /&gt;Preheat oven to 375 degrees.&lt;br /&gt;&lt;br /&gt;Lightly grease an 8x8 baking dish. Add blackberries and sprinkle with lemon juice. These are so delicious!&lt;br /&gt;&lt;br /&gt;1 (18.25) package of yellow cake mix&lt;br /&gt;1 stick of butter or margarine&lt;br /&gt;3 eggs&lt;br /&gt;1 (8 ounce) package cream cheese, softened&lt;br /&gt;3 1/2 cups confectioners' sugar&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees. Grease and flour a 15x10 inch sheet pan.&lt;br /&gt;&lt;br /&gt;Mix together cake mix, butter or margarine, and 1 egg. I looked online at a few recipes but I decided to make my own!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;12 large scallops (or however many you need)&lt;br /&gt;6 slices of bacon&lt;br /&gt;1 tbsp of sundried tomato salad dressing&lt;br /&gt;1/2 tsp black pepper&lt;br /&gt;1 tsp lemon juice&lt;br /&gt;12 toothpicks&lt;br /&gt;&lt;br /&gt;Wash scallops and place in bowl. Add dressing, pepper, and lemon juice to scallops and toss. While your pasta is cooking, in a bowl combine the garlic, parsley, salt, pepper, and olive oil. Place half of the mixture over the shrimp and toss to coat. In a large heated pan, add the shrimp and cook until firm and light pink. Add the remainder of the garlic mixture and red pepper flakes. Cook for about 2 minutes. Add wine, butter, and lemon zest and juice and cook for about 2-3 minutes. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Once the pasta is cooked, drain and add to the shrimp mixture. Toss to coat and serve.
